Jan 19, 2012: Got a vegetarian!
Last week I had the honor of serving lunch to the lovely ladies of Roberts and Langer and today had the pleasure of bringing 7 lunches to the Ralph Lauren office on Madison Ave. One of my best friends who works at RL is a vegetarian, so today I served black bean burgers with a homemade granola bar and Lara bars.
Sandwich: Black Bean Burger with havarti cheese, lettuce, tomato, avocado and chipotle sour cream on a wheat bun. The burgers did not stick together as well as the recipe said they would…thinking maybe they need an egg or two added in. It was my first time working with chipotles and although I like spicy, I think I’d use less than 2 chipotles in the sour cream recipe. I didn’t want to set anyone’s mouth on fire, so used the spread sparingly on the sandwiches. It’s too bad too, I think the sandwiches could have used the moisture.
Snack: Homemade granola bars (peanut butter, bananas, flax seed, dried fruit, walnuts, oats, cinnamon and coconut flakes). I also had leftover money in the budget so I bought some dates and made the Lara bars again, since RL hadn’t tried them yet. They also got some leftover apples that were purchased for the granola bars.
