April Highlights Part I

March 28, 2012: Meatballs get a second chance and become patties 

I hadn’t planned to try the Bon Appetit chicken meatballs again. Since I wasn’t happy with the execution of the sandwich itself, I assumed my lunchers would be as well. Turns out they didn’t care…so I got a chance to redeem myself, and redeem myself I did.

This time though, the meatballs became patties. And this time I had time to melt the cheese and place the onions INSIDE two layers of provolone. One last thing, this time I used spicy chipotle mayonaise with regular mayonaise for a little kick. James suggested that one. 

Sandwich: Ground chicken breast, parmesan, bread crumbs, garlic, chives, egg, salt and pepper. Arugula, provolone, caramelized onions, plain and spicy chipotle mayonaise on whole wheat sandwich roll. (Source)

Snack: Homemade Lara bar for the 900th time. ;) For an added surprise, I cut up some fresh strawberries.

March 27, 2012: Newcomers to Tuna Tuesday

The ladies over at the Ralph Lauren office got their first bite of Tuna Tuesday heaven today. I had faith in Tuna Tuesday and it delivered. Such a good sandwich.

March 26, 2012: Meatless Monday go round 

We’re starting off the week with the same “Meatless Monday” sandwich as last week. Perhaps meatless monday will evolve to feature a new veggie sandwich each week, but for now, this one is just too good to pass up. 

Sandwich: Mashed Cannelloni beans, hummus, sprouts, feta, avocado, cucumber and red onion and a whole wheat challah roll

Snack: Hummus mixed with leftover feta, leftover cannelloni beans, carrots, spelt sticks and Whole Foods brand fruit leather

March 22, 2012: Prosciutto…mmm

Prosciutto sandwich pretty much speaks for itself…so simple yet so good :)

Sandwich: Prosciutto, fig jam, goat cheese, arugula on ciabatta bun

Snack: 0% Greek yogurt with fresh blueberries, banana and Whole Foods brand granola

March 21, 2012: Bon Appetit all the way

Both recipes from today’s lunch come from Bon Appetit. I have a serious love affair with that magazine. One recipe, you’ve already seen a few times—the roasted pineapple. The other is new. We tried a chicken meatball sub today. It was tasty but I ran out of time so didn’t execute the sandwich as well as I would have like. Hopefully I’ll get another go at it.

March 20, 2012: Tuna Tuesday

Simple yet delicious day…the good ‘ol Tuna Tuesday with some cut up veggies and hummus for a snack. Tre healthy.

March 16, 2012: Deli-Style Friday

It’s Friday! That about sums it up. As my favorite subway conductor says every Friday morning, “I hope you have a warm and cozy weekend.”

Sandwich: Ham, Turkey, heirloom tomates, red onion, jalapeños, arugula, melted havarti cheese, pesto + mayo spread on seven grain bread

Snack: Pistachios, Cashews, Dates and coconut flakes + store-bought blueberry granola
